Description: A remarkably fluffy gluten-free white loaf made with just 6 ingredients. Naturally dairy-free and vegan.
Ingredients
- 500g Mulino Caputo Fioreglut Gluten Free Flour
- 440ml warm water
- 8g fast-action yeast (e.g., Allinsons Easy Bake Yeast)
- 2 tbsp olive oil (30ml) + extra for brushing and greasing
- 1 tsp fine salt
- 1 tsp caster sugar
Instructions
- Combine Ingredients: In a stand mixer with a dough hook (or mixing bowl with a spoon and elbow grease!), add all ingredients. Mix for 3-4 minutes until a smooth, sticky dough forms.
- Prepare Loaf Tin: Grease a 2lb non-stick loaf tin with olive oil, ensuring base and sides are coated. Transfer dough into the tin using a spatula or dough scraper. Wet fingers and gently smooth the top.
- Prove the Dough: Lightly oil one side of cling film and cover the tin, oil-side down, ensuring it’s loose to allow rising. Prove for about 1 hour, or until dough reaches the tin’s top. Proving time may vary with temperature.
- Preheat & Slash: Once proved, preheat oven to 200C (fan). Brush loaf top with oil. Using a wet, sharp knife, make 5 shallow (1cm deep) slashes across the top.
- Bake: Bake on the middle oven shelf for 35 minutes, until golden and the base sounds hollow when tapped.
